Power Snack Mix

My old French teacher once told me that in French the word for an after-work snack is "gouter", and that it is the best meal of the day. I have to say that I agree with her, theres nothing better than a good afternoon snack.

Snacks are wonderful, but good ones are hard to find. A balance  of salty and sweet, enough to keep you full but with less calories than a meal, healthy, but still tasty..

I felt that I had accomplished this ideal equation with this snack mix. One thing that differentiates this mix from your regular trail mix is that it has edamame. I stumbled upon this dry-roasted edamame in the bulk section of my supermarket and inspiration struck. Edamame is what puts the 'power' in this snack mix. A bean that is really high in protein, with 13 g per 1/3 of a cup, and is also a good soruce of fibre. These two components mean that edamame packs a a lot of punch in a small serving. Edamame is much lower in calories and fat than nuts and seeds, making it lighter than your typical trail mix. No peanuts or m&ms here!

It's super simple to put together and you can make as much or as little as you want, just follow the ratio of ingredients in the recipe. This makes a great snack for work or anytime you are on-the-go and healthy snack options are out of reach. The perfect snack to help you power through the day!

Power Snack Mix

makes twelve 1/3 cup servings


2 cups roasted edamame

1 cup dry roasted almonds, unsalted

1/2 cup dry roasted pumpkin seeds, unsalted

1/2 cup dried cranberries


1. mix together all ingredients and store in a sealed container.
